Cashew Coconut Banana Ice Cream, Chia Pudding & Blueberries

Ingredients

Chia pudding:

1 tbsp chia seeds
1/2 cup almond milk
1 tbsp shredded coconut
1 tsp sugar

Ice cream:

2 large bananas, frozen
1/2 cup coconut water
1 tbsp cashew butter (or peanut butter, if desired)
1 tsp vanilla essence
1 tsp sugar

Fresh blueberries, to serve

Method

Place all the chia pudding ingredients in a large glass, stir and place in the fridge for six hours.

Blend together bananas, coconut water, cashew butter, vanilla essence and sugar until smooth and creamy.

To serve, layer banana ice cream, chia pudding and blueberries in alternate layers and serve immediately.
