For the Filling:
400g beef short rib meat (minced or finely chopped)
1 cup cabbage, finely chopped and salted
½ cup onion, minced
2 stalks spring onion, chopped
1 Tbs garlic, minced
1 tsp ginger, minced
1 Tbs sesame oil
1 Tbs roasted sesame seeds
Dumpling wrappers
For the Galbi Sauce Base:
4 Tbs soy sauce
2 Tbs sugar
2 Tbs Korean pear puree
1 Tbs apple puree
1 Tbs grated onion
1 tsp grated garlic
½ tsp grated ginger
Pinch of pepper
For the Galbi Sauce Base:
Combine all ingredients and mix until combined.
For the Filling:
Combine short rib meat with the galbi sauce base and mix well.
Add cabbage, onion, spring onion, garlic, ginger, sesame oil and sesame seeds.
Place filling in wrapper and fold dumplings.
Steam 8–10 min or pan-fry then steam.
Serve with soy dipping sauce.
