170 g bacon, about 6 strips
1 1/2 cups plain flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp mustard powder
1/3 cup frozen unsalted butter
1/2 cup grated cheddar cheese
1/4 cup chopped spring onion
2/3 cup buttermilk
Preheat oven to 180°C and line a baking tray with greaseproof paper.
Chop bacon and cook in skillet over medium heat for 6-8 mins or until crisp. Transfer to a paper lined plate and place aside.
In a bowl, combine flour, baking powder, baking soda, salt and mustard powder and stir with a fork.
Use a grater to grate frozen butter into flour mixture. Add cheese, chopped spring onion and cooked bacon.
Stir in buttermilk and make a dough. Turn dough out onto baking sheet and cut into 8 wedges. Separate on baking sheet.
Bake for 22 mins or until golden brown and cooked through.
