What is a must-try dish/drink?

For the dish, it would be the seared scallops, cauliflower cream, pancetta, parsley, garlic crumble and Champagne vinaigrette. 

For the drink, it would be the Pink Lady made with London dry gin, applejack, lemon juice, grenadine and egg white. We also have a curated selection of wines that celebrate the richness of our local and regional terroir.

With more than 22 years of culinary experience, Chef Saran Maidhili Sasilkumar has honed his craft in some of the most prestigious kitchens in the world. Trained in internationally acclaimed, 3 Michelin-starred restaurants - including Noma, Geranium and Azurmendi - he brings a deep understanding of modern gastronomy, precision techniques and sustainable culinary practices.

Chef Saran further solidified his reputation as the Head Chef of the iconic Hydro Majestic Hotel and the Wintergarden Restaurant, where under his leadership, the venue earned 2 Chef Hats from the Australian Good Food Guide (AGFG) - a testament to his commitment to excellence and innovation.

His extensive global exposure, paired with decades of experience, allows him to blend refined technique with creativity, delivering memorable dining experiences that celebrate both local ingredients and world-class standards.
