1 kg yoghurt-strained overnight in a cheesecloth. Do not discard the juice; add a touch of lemon juice, a sprinkle of salt and ice to make a refreshing and healthy drink called Ayran. You will end up with approximately 500 g of strained yoghurt.
1 garlic-minced with a pinch of salt
1 Tbs chopped dill
1 medium zucchini- grated
1 tsp salt
2 Tbs lemon juice
50 mL extra virgin olive oil
2 Tbs crushed walnuts
Combine the ingredients by gently folding it over itself.
Serve with a drizzle of extra virgin olive oil and sprinkle of walnut and dill leaves.
