If taking these to a picnic, wrap tightly and pack honey separately to serve.
1 kg Ricotta
300 g Parmesan
300 g GF Flour
10 g Salt
Mix all together, then flatten the dough over a dusted bench, cut long stripes and roll like a log.
Cut the gnocchi and freeze.
