What is a must-try dish/drink?
The whole menu! At Sylvie we offer a tasting menu showcasing the local produce and seafood of Southern Tasmania, as such we don’t believe that there is a must-try dish, rather we suggest you enjoy the menu as a whole.
We try to guide you through the current season of what’s at the height of quality! At the moment we have the most amazing tomatoes, apples, Tropea onions and passionfruit and they’re definitely all worth a try. So let us take you on a journey through what we believe to be some of the best quality ingredients.
What is your point of difference, what sets you apart?
The obvious first point of difference is that we are a solely pescatarian restaurant, so that means no meat at all! We have been playing around with the idea of putting mutton bird on the menu, seeing as it’s something we feel like we could get away with being essentially seafood adjacent.

We instead try to focus on the bounty of the ocean, though there are also a lot of vegetable-focused dishes! What’s more, we try to do as much possible in house, we do a lot of preserving and fermenting.
The highlight of which is currently our housemade apple cider, which to be honest started life as an apple cider vinegar idea, but was too delicious to let turn into vinegar. In all honesty we believe that there are a lot of points of differences that make Sylvie Hobart unique especially within the Hobart hospitality scene, probably too many to list here. They’ll just have to be something of a surprise when you come dine with us!
Tell us something not many people know about the venue?
Before we took the venue over it used to be a nightclub, if you look closely, you can still see the bones of it. That is if you can get over the exposed sandstone walls and the native Tasmanian hardwood tables and bars, but who doesn’t enjoy a moody, intimate dining experience.
