This restaurant’s name comes from the Latin word ‘silva’ meaning ‘forest’ and symbolises a deep appreciation for natural ingredients and the bounty of land and sea delivered in an ever-evolving weekly menu, created from seafood that has been caught on the day and what local produce is in season. Think adventurous starters like dry-aged boarfish sashimi, served with bull pepper and seaweed purée, or slow-roasted, caramelised beetroot, rocket and chamomile soup; before mains such as hand-cut soba noodles with cold-infused crayfish dashi and gently poached tails.
