Go ‘Full Bush’ with this Cocktail from Double Deuce Lounge!

Head downstairs on Bridge Street in Sydney to find fun and funky cocktail lounge Double Deuce to indulge in all manner of drinks and bites to share.

Named after the dive bar in the 1989 Patrick Swayze movie, Road House, this venue boasts a ‘70s porn chic’ vibe, complete with an intimate, furry-walled ‘kissing booth’; you may even see a framed vintage Playboy cover or two appearing on the walls.

Where better to go ‘Full Bush’ with this cocktail recipe from Mixologist, Oliver Churcher, which offers a nod to the setting and also herbal South African tea rooibos.

"This is an easy-going, refreshing take on a whisky sour,” he explains. "The name comes from the rooibos tea – a herbal South African tea that means ‘red bush’ in Afrikaans.”

The cocktail is mixed with yuzushu – a sake combined with yuzu fruit that is both zesty, tart and sweet – along with grapefruit, lemon juice and maple rooibos syrup.

The syrup needs to be made in advance as it has to steep in the fridge overnight to make a rooibos cold brew, which then has sugar and maple syrup added to create the mix. Strain the cocktail over ice and grate grapefruit zest on top to finish!
