What better way to chill out than with a cocktail at your favourite bar or restaurant. Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Contemporary Australian cuisine with a focus on a farm-to-plate philosophy is what you can expect at Wild Water restaurant on Goulburn Valley Highway in Trawool. Proudly named after the translation of the local Aboriginal word Traawool and nestled in The Trawool Estate, this casual dining venue has a light, bright vibe from a full glass frontage allowing sweeping views of the countryside, blond wood table settings and potted greenery.

Mixologist, Charlie Leddin brings to the cocktail bar his recipe for the Leddin Meringue Pie creation, a truly different drink which ticks all the senses and was inspired by his Nanna Margaret’s famous lemon meringue pies. 

"Sadly, she passed away last year and I was fondly reminiscing about how whenever we went over to her house, she would always have a lemon meringue pie ready for us,” he tells AGFG. "I wanted to honour this memory through my work as a barman at The Trawool Estate and started thinking ‘how could I make that into a cocktail?’ – ergo, the Leddin Meringue Pie was created.”

The visual smoking of the meringue mixed with the charred aroma when you take the first sip, contrasts brilliantly with the sweet and tart lemon notes that remind you instantly of lemon meringue pie.

"The theatrics of cracking the torched meringue adds a fun touch to the experience! The perfect customer for this cocktail is a lemon lover who appreciates sweeter cocktails.”
