Peppered Honey Rosemary Halloumi Skewers


2 x 180 g blocks halloumi (try to find rectangular blocks for this recipe)
8 long sprigs rosemary
Bertolli Light in Taste Olive Oil Spray
Juice of 1 lime
2 Tbs honey
Freshly cracked black pepper


Cut each halloumi into 4 equal lengths.

Strip rosemary leaves from the thickest half of the sprig, then pierce through each halloumi stick lengthways. Spray each surface with Bertolli Light in Taste Olive Oil Spray.

Whisk together lime juice, honey and a generous amount of ground black pepper.

Fry halloumi (in frypan or BBQ) on high for 1-2 mins each side until golden. Immediately brush hot halloumi generously with the lime honey mixture. Serve hot.
