The first chocolate bar was created by British chocolatier J.S. Fry in 1847 molded from a paste made of sugar, chocolate liqueur and cocoa butter. Who knew this humble piece of chocolate would change the world?

Who doesn’t like chocolate said no one ever! Here at AGFG, we have several chocoholics who much like coffee drinkers can’t function properly until the first piece of heaven hits their taste buds, so it seems fitting to have a whole week dedicated to chocolate.

This week, The Kitchen at Bec Hardy Chef Connor Bishop dishes up his top five tips for working with chocolate and his recipe for a Jerusalem artichoke and chocolate dessert that will have you salivating.

For this week’s Chef Chat, we talk to Johnny Ping from the Oxi Tea Room in Carlton about studying culinary arts and pastry in Taiwan and starting his career in Singapore working at a variety of dessert shops, restaurants and hotels. He delivers a delicious chocolate mousse recipe sure to be a hit over the festive season with family and friends – this one is the perfect chocolate treat for Christmas.
