The Consortium Qld is delighted to unveil its newest restaurant, Olivera, located on the prime corner of Cambridge Parade and the Esplanade in Manly.
This elegant, light-filled space introduces a refined take on coastal Mediterranean dining to Brisbane’s bayside and marks the next chapter in the group's portfolio of distinctive venues.

Olivera follows the success of The Arsonist and Wang Chung, yet carries a rhythm all its own - raw and grilled; bright, not brash. The venue pairs honest food with thoughtful details, drawing inspiration from the sun-drenched flavours of Southern Europe while remaining firmly rooted in local produce and Queensland charm.
From bites and small plates to larger shared offerings, the Olivera menu leans into freshness and finesse. Early favourites include:

- Southern rock lobster linguine – a celebration of richness and restraint, served with a bisque reduction, blistered cherry tomatoes and fresh basil.
- Handmade focaccia – rosemary and confit garlic, baked fresh each morning and served with herb-infused olive oil.
- Slow-cooked lamb shoulder – served with caramelised yoghurt, silverbeet, smoked olive and rosemary jus; hearty, generous and deeply flavourful.
- Slow-cooked octopus – with romesco and smoked almond; tender and flame-kissed with coastal flair.
For those seeking something sweet, the caramelised goats’ milk panna cotta - served with fig leaf granita and roasted black figs - is a standout finale.

The drinks program is equally evocative, led by the Chamomile Daiquiri - a delicately layered cocktail of chamomile and vanilla-infused rum, with lime. Alongside it, the Fig Old Fashioned offers a more brooding contrast, balancing fig-infused bourbon with honey, fig syrup and walnut bitters for a rich, textural finish.
Head Chef Sean Garrett brings a wealth of experience from some of the world’s most prestigious kitchens, including The Ledbury in Notting Hill, Aria in Sydney and the renowned Becasse.
Trained in the classic Australian bistro style and refined through years in Michelin-starred UK establishments, Sean’s career has spanned every position from apprentice to Head Chef. His culinary philosophy combines the precision of fine dining with the approachable soul of great gastro pub fare - 'good food done well' remains his core belief.
Restaurant Manager, Cole Wallis has more than a decade of international hospitality experience and delivers calm leadership and seamless service to Olivera’s front-of-house.
He began with The Consortium Qld at Wang Chung, quickly proving himself an invaluable asset before taking the reins at Olivera. His earlier work aboard Cunard Cruise Lines and P&O Cruises adds a layer of global polish, having served and sailed across the world in premium hospitality settings.
