New Winter Menu Set to Sizzle at Bar 1800

Discover one of Sydney’s best-kept secrets - Bar 1880, a hidden and moody speakeasy tucked away in the heart of Circular Quay that’s fast becoming a favourite for travellers who are in search of something truly unique.

Set to become a destination in its own right nestled inside a 140-year-old paper mill, Bar 1880 has quietly earned a cult following - and a reputation as one of Sydney’s most atmospheric hidden gems - thanks to its moody interiors, cheeky attitude and theatrical, transportive cocktails, since opening its doors in 2023.

With the cooler months rolling in, the team has unveiled its new Winter menu, designed to surprise, delight and transport.

The new menu features 11 inventive cocktails and standout bites - think burrata, flame-grilled skewers and the playful Martini dip (yes, a martini you can eat).

Highlights include:

  • Berry Necessary: clarified gin, Chambord, cranberry and raspberry syrup. Dramatic, delicate and hard to forget.
  • The Basil Bandit: A Martini with a side of mischief - herb oil, soy and a kick of basil that turns the classic on its head.
  • Golden Hour: a warm twist on the Old Fashioned with burnt butter bourbon and vanilla bitters. Cosy, but not sleepy.
  • Bitter Sweet Symphony: a Negroni gone rogue - smoky, caramelised, unapologetically bold.
