European bistro-style dining with a Scandinavian vibe is what Surry Hills diners find at neighbourhood wine spot Bar Suze on Foveaux Street. A sleek interior ambience of a marble bar, white subway tiles, funky artwork and moody lighting awaits, as friends gather for an after-work drink and catch up while perusing a monthly-changing menu.

What’s your most popular dish/drink:

We pride ourselves on being a natural wine bar, but if wines not your thing our ‘Dill Margarita’ is pretty good (tequila, mescal, dill, salt, celery and lime).

Phil our Head Chef/owner is Swedish and we also have our own meat smoker, which means there is always something smoked on the menu - usually seafood -that’s the dish to look out for.

What's your point of difference:

A menu that truly changes monthly and a Swedish Chef who’s attempting to share a slice of his heritage within a seasonal Australian produce-driven menu. 

Our wine list is also forever changing, it’s rare that we will order the same dozen bottles of wine week after week. We do this because we don’t want to eat and drink the same food and wine, there are so many interesting wines, dishes and produce to work with, we want to taste it all. 
 
What is a fun fact that not many people know about the venue?

We want our guests who come to drink and dine at our venue to have the best time possible.

The three owners-operators started off as work colleagues and then became friends, spending the better part of three years trying to find the right venue, found it in the middle of a pandemic…we want to work hard and have fun.
