Within its storied walls lie two venues waiting to be discovered: the intriguing Bar Cruz and whisky-driven Bar Mary.

While Restaurant Aptos promises a multi-level dining experience that consumes and envelops, Bar Cruz sets the stage for the unfolding culinary narrative with a series of inviting enclaves.

Named with a nod to the building’s past as Aptos Cruz Galleries, Bar Cruz isn't just a pre-dinner stop – it's a destination, boasting four distinct zones:

  • The bar: a bar seating just for six; perfect for innovative cocktails, five-course cocktail pairing or a drink and snack.
  • The dining room: a small dining room offering a more focused experience with Bar Cruz's unique menu.
  • The Aptos Lounge: a relaxed yet stylish setting to unwind before or after the Aptos journey but also a place for a drink for Bar Cruz guests.
  • The Courtyard (14 seats, weather permitting): an open-air extension for those in the know, offering a different perspective on the historic setting.
For those who love whisky, Bar Mary awaits. An eight-seat whisky bar tucked away within the restaurant's embrace with a curated collection of the world's finest whiskies and one food offering (food you want with a drink).

Bar Mary is an experience in itself – a discreet escape from the main event, offering a dynamic exploration of the golden spirit.

The Aptos journey is fluid, with guests often beginning or ending their experience within the welcoming embrace of Bar Cruz. The restaurant itself hosts 14 diners per seating, guiding them through a 2.5 to 3-hour exploration across three distinct floors, each with its own ambience and culinary focus.

The journey culminates with the option to further indulge in the dynamic whisky offerings of Bar Mary or retreat to the atmospheric outdoor teepee with its crackling fire pit and a curated wine room accessible upon request.

Restaurant Aptos is about bringing the Australian landscape indoors; a celebration of unique native produce delivered with intrigue and a touch of playful irreverence.

The design, inspired by the natural beauty of the Adelaide Hills and infused with elements of Japan, Scandinavia and mid-Century modernism, features subtle nods to the Australian environment, creating a visual tapestry that complements the culinary adventure.

This multifaceted venue offers three distinct reasons to visit the historic Stirling church. Restaurant Aptos provides a celebrated dining experience, Bar Cruz offers a vibrant and accessible bar and dining destination with its own identity and Bar Mary presents an intimate and exclusive whisky sanctuary.

Restaurant Aptos will open in October this year.
