Citrique at JW Marriott Gold Coast Resort & Spa invites diners to embark on a rich culinary journey through Thailand as part of its ongoing Chef Spotlight series, running until July 31.
The second instalment in the Chef Spotlight series showcases the bold, aromatic flavours of Thailand, crafted by celebrated Thai Chef Anukool Poolpipat, affectionately known as Chef Aony.
Currently Senior Sous Chef at The Siam Tea Room at Asiatique the Riverfront, Bangkok, Chef Aony joins forces with JW Marriott Gold Coast Executive Chef Paul Smart and the Chef-hatted Citrique team to bring a taste of Thailand to the Gold Coast.
Drawing on recipes passed down through generations of cooks in his family, Chef Aony’s menu reveals the deep cultural connections between heritage, ingredients and storytelling.
Raised on a small organic farm and inspired by the cooking of his mother and grandmother, Chef Aony began his culinary career at JW Marriott Bangkok. He quickly rose through the ranks, winning prestigious culinary competitions such as the Thai Food Contest Culinary Cup in 2009 and the TICC Modern Thai Cuisine Contest in 2010, eventually being named Master Chef at JW Marriott Bangkok.
His unique style blends the soul of Thai cuisine with modern culinary techniques, resulting in dishes that are as vibrant and complex as the country’s culture itself.
From now until July 31, guests can explore the layers of Thai cuisine through Citrique’s signature weekend seafood and grill buffet, which will be elevated with an additional array of rich and flavourful Thai dishes.
Highlights include a live Pad Thai station with prawn, chicken or seafood options, as well as Thai Isan minced pork salad, green papaya salad with grilled chicken and sticky rice, Khao Soi with crispy soft-shell crab, roasted duck red curry, slow-cooked pork ribs, green beef curry and grilled whole fish served with spicy dipping sauces.
Guests can pair the meal with a selection of Thai-inspired cocktails, such as a lemongrass Margarita with housemade lemongrass and pandan syrup, before finishing their feast with traditional desserts, including mango sticky rice, pandan custard with toasted bread and baked coconut custard with golden beans.
Throughout the week, diners can experience a curated selection of Thai flavours on Citrique’s a la carte menu. Special dishes include pad Thai goong with grilled jumbo sea prawns, red snapper curry with eggplant and coconut foam served with jasmine rice and a slow-braised lamb shank massaman with almonds and baby onions.
Each dish is crafted to highlight the fresh herbs, spices and pastes that are the hallmarks of Thai cooking. To further complement this,Chapter & Verse Lounge and Bar will serve bite-sized editions with the Thai Street Food menu, including fragrant lemongrass chicken skewers and juicy prawn cakes in the all-day dining menu.
The Chef Spotlight series began in March with My Sri Lanka Spice Trail, led by Chef Peter Kuruvita, and continues its mission to celebrate multicultural cuisine and the culinary talent within the Marriott network. Each edition brings to life a new region through food, storytelling and ingredients.
Citrique’s renowned seafood & grill buffet is available Friday and Saturday from 5.30 pm ($99 per adult/$49 per child aged 5-12 years) and Sunday from 12 pm with flowing Mimosas, Thai crafted cocktails and live entertainment ($99 per adult/$49 per child aged 5-12 years). Weekday à la carte dining is available Monday to Thursday from 6 pm.
