"Tequila-based cocktails are definitely having a moment and Ugly Baby is all here for it,” he says. "Tequila is a serious cocktail ingredient, showcasing depth of flavour, complimenting the citrus and sugar in this drink while the chilli packs a punch.”
Mirko first sampled a similar drink when travelling through Santorini, with only fond memories, he was destined to recreate it and keep the memories alive!
"Chilli heat is always subjective and this took a lot of taste testing and experimentation to get it right and not blow people's heads off,” he explains.
Mirko has been part of the family since Ugly Baby opened - originally from Sicily, he brings an authentic touch of the Mediterranean to the restaurant.
Having worked in hospitality since he was 15, Mirko has seasoned his skills everywhere from Longdon to Miami, Italy to Sydney, and now Perth. His passion for hospitality shines in everything he does and if you have the chance to meet him, you’ll know what we mean!
