"This cocktail is really approachable and can be made sweeter or more refreshing by playing with the ratio of yuzu and lime juice, as well as being able to swap the gin to add a more botanical forward twist lets you be creative,” he explains.
"This is also a great cocktail to make for a group serve - as the playful flavours are a crowd pleaser.”
Steven-Christopher says the cocktail was named North Star to pay homage to the hotel’s first signature drink, The Stargazer; which also played with gin and pineapple.
"So, in a way, it’s a little bright light of a cocktail that brought us home and helped tie the menu concept together.
"In theme with the signature menu, which highlighted the time-honoured tradition of nautical navigation through the stars, we wanted our first cocktail to be both exciting and refreshing for the palate.”
