67 Pall Mall Melbourne is poised to redefine the city’s hospitality landscape with the appointment of Martin Benn and Vicki Wild as Managing Culinary Partners.
Martin and Vicki’s signing marks a significant milestone for the private Members Club as it prepares to bring a world-class food, wine and service experience to Melbourne’s CBD.

The duo will shape the club’s identity by blending Melbourne’s vibrant dining culture with 67 Pall Mall’s globally recognised excellence. Their appointment strengthens the club’s commitment to a distinctly Melbourne experience, embracing the city’s dynamic hospitality scene while staying true to the signature elements that define 67 Pall Mall Clubs.
Martin and Vicki are the visionaries and operators behind Sydney’s internationally acclaimed Sepia -garnering numerous awards before closing in 2018 - with the duo most recently collaborating with the National Gallery of Victoria and Club 1905 at the 2025 Australian Open.
Grant Ashton, Founder and CEO of 67 Pall Mall, says:
"We’re thrilled to welcome Martin and Vicki to the team in Melbourne. Their reputation for precision, authenticity and warmth speaks for itself. Martin’s culinary vision, paired with Vicki’s commitment to creating thoughtful, memorable hospitality, aligns seamlessly with our values. We’re confident the Club is in exceptional hands.”

For Martin, this represents a new chapter, one that shifts his focus from the restrictions and demands of running a traditional restaurant to a role centred on mentorship and innovation. The club’s member-led model removes the constraints of commercial dining, allowing Martin and Vicki to foster a culture that nurtures the next generation of hospitality professionals.
Martin says: "We are honoured to join 67 Pall Mall Melbourne and to share our passion for food with their members. We have found a dynamic partner who will allow us to achieve our vision and enter the next chapter in our new Melbourne home.
"It’s always a privilege to spend time mentoring, I’ve had the pleasure of working with many great young Chefs and I appreciate the opportunity to help guide the next generation.”
67 Pall Mall has a long-standing commitment to professional development, demonstrated through its wine training programme, which includes in-house WSET courses, accreditation and interdepartmental placements.

With Martin and Vicki at the helm, the Melbourne Club will extend this philosophy to both front- and back- of- house teams, providing an environment where talent can thrive.
With four levels of hospitality, including restaurants and bars, 67 Pall Mall Melbourne will offer members a 5000-label wine list from 42 countries, serving from breakfast to nightcap.
Martin and Vicki’s expertise in high-quality dining will shine through in menus blending global influences with the finest local produce. Food and wine pairings remain central, allowing members to explore the club’s extensive wine list.
67 Pall Mall Melbourne is primed to become a destination for those who appreciate fine wine, exceptional food and a level of service that is both considered and welcoming.
