As 1 Hotel Melbourne prepares to open its doors on June 19, the city’s first mission-driven, nature-inspired hotel is proud to unveil its flagship dining destination: From Here by Mike, created in partnership with celebrated Australian Chef Mike McEnearney.
A shared philosophy, grounded in nature
From Here by Mike marks Mike’s first hotel collaboration. Known for his ingredient-first ethos, low-waste approach, two acclaimed cookbooks and beloved Sydney eatery Kitchen by Mike, he brings his signature style of cooking - one that honours both produce and provenance - to the heart of Melbourne.

Grounded in simplicity and guided by sustainability, From Here by Mike will offer a deeply seasonal dining experience inspired by Victoria’s rich local bounty. Open for breakfast, lunch and dinner service, each menu will celebrate low-impact farming, hyper-local sourcing and minimal intervention - values closely aligned with both 1 Hotels and Mike.
Each dish is designed to nourish, connect and reflect the story of where it came from - from the land, to the plate, to you.

Whether it’s freshly shucked oysters with pickled daikon and finger lime vinaigrette; twice-baked goats’ cheese soufflé with rosemary cream; or the wood-roasted cockerel with vadouvan sauce, cime di rapa and blackened leeks, each dish at From Here by Mike is designed for sharing, fostering connection and cultivating a sense of wellbeing and vitality.
The wine program has been crafted with equal intention. Around 40% of the selection features exceptional Victorian wines, with a focus on celebrating winemakers who practice minimal intervention, biodynamic, organic and sustainable methods, providing purity, energy and character in every glass.
Additionally, the cocktail selection will emphasise sustainability by repurposing ingredients and working closely with the culinary team to source local, seasonal products. Each offering will be thoughtfully crafted to complement the food menu, creating a seamless pairing experience.
