Situated in a basement on Melbourne’s most famous laneway, Cecconi’s Flinders Lane is a modern day classic Italian restaurant, influenced by its heritage from the country’s north. Long a staple on the city’s dining scene, Cecconi’s offers elegant and relaxed dining at white-clothed tables under glowing pendents, while the marble topped bar boasts an extensive selection of wines and spirits. Start with antipasti like mushroom and fontina arancini and truffle mayo, or freshly shucked oysters, pickled pear and wild lime dressing; before delving into Campari-cured salmon, citrus salad, watercress and capers. Potato gnocchi, Moreton Bay bugs, zucchini pesto, pistachio and pecorino will entice pasta lovers; while pork cutlet, crispy belly, red cabbage, plum and walnut appeases the carnivore.

CHEF PROFILE - Olimpia Bortolotto
Born: Veneto, Italy
History : For over 30 years, Melbourne's Bortolotto family - Leo, Olimpia, Anna and Maria - have created a succession of modern Italian restaurants where food, wine, service and atmosphere blend beautifully together.
Bortolotto's Café Menis, Fitzroy Street St Kilda epitomized the revolution sweeping Melbourne's food and wine world in the late 80s and 90s.
A visit to Cecconi's in London prompted Lloyd Williams to establish such a venue at Crown Casino in 1996. Two years later, he approached Olimpia to resurrect the ailing project. The grand venue on the Yarra perfectly suited the creative energy and vision of this family. Cecconi's at Crown rapidly become known around the world for its food, style and service.
In 2006, the family brought Cecconi's Cantina to Flinders Lane, the former Langton's Wine Bar.
Have you always wanted to be a Chef?
Growing up in an Italian family, food has always been a part of my life. Throughout my youth I remember watching my dad and later helping him to make the salamis for the family. From that I developed a love of cooking for family and friends which led me to open Bortolotto's Cafe Menis and as they say the rest is history.
How would you define your style? Northern Italian.
What is your feature flavour these days? Organic natural flavours, utilising local produce.
Obsessive compulsive about? Bolognese.
Your greatest culinary inspirations/influences: Noma in Copenhagen and the head chef there, Rene Redzepi
What do you love about this business?
It doesn't matter how long that you've been in this business but there is always the opportunity to develop and grow your skills and palate. It's the adrenaline that you get on a regular basis when going into service. There is also the daily opportunity to meet new people and to see the delight on their face when their meals are presented to them.
An ingredient you can't live without? Salt and quality virgin olive oil.
Most "eyebrow raising" menu item? Wasabi ice cream.
Signature Dish: Seafood linguine, an altered version of which is still available on the menu.
