45mL home-brewed green tea
30mL botanical gin
15mL vermouth bianco/dry sherry wine
2-3 drops fresh lemon juice
10-15mL peach syrup
Caramel matcha micro foam
Black caviar beads
Lightly brew green tea to limit bitterness and chill the brewed tea.
Add the brewed green tea, gin, vermouth, peach syrup and 2-3 drops of lemon into the mixing glass and stir.
Pour the drink into a Nick & Nora Glass.
Garnish:
Take matcha powder and add caramel and whisk until frothy.
Layer the matcha froth on top of the cocktail.
Rest a few bits of black caviar on the glass rim or on a spoon.
