3 cups (750mL) coconut water
560 g pitted lychees in syrup
2 Tbs lime juice
2 Tbs lime cordial
1 lime, rind finely grated
1 lime, extra, cut into wedges
1/4 cup (10 g) shaved coconut
200mL coconut milk
Combine the coconut water, lychees in syrup and the lime juice in a blender and blend until smooth. Pour into a shallow baking tray and place in the freezer for 6 hours or until frozen.
Use a large fork to scrape the frozen lychee mixture into flaky crystals. Divide among 4 chilled serving glasses. Top with the cordial, lime rind, lime wedges and shaved coconut. Pour over coconut milk and serve immediately.
