Tamdhu Single Malt Scotch Whisky has teamed up with pioneering Australian Chef Josh Niland and his world-renowned restaurant Saint Peter for a limited-time dining event that brings together exceptional single malt and innovative seafood.

For this limited-time collaboration, the Saint Peter team has crafted a bespoke, innovative seafood menu inspired by the bold, sherried richness of the Tamdhu, offering a fresh and refined take on traditional whisky pairing.
Running from Sunday, August 24to Sunday, September 7, including Father’s Day, the experience invites guests into Saint Peter’s intimate Paddington bar to experience a bespoke three-course menu that pairs the rich depth of Tamdhu whisky with Josh’s boundary-pushing cuisine.
Saint Peter is known for its trailblazing approach to whole-fish cooking and sustainable seafood and this experience will elevate the whisky pairing and food experience into a domain that celebrates flavour, sustainability and craftsmanship.
Guests will be welcomed with a Tamdhu whisky cocktail on arrival, followed by a three-course seafood menu with each course served alongside a curated whisky pairing. Both Tamdhu’s 12-year-old and 15-year-old expressions will be featured, offering a unique opportunity to explore the brand’s signature style: rich, complex and exclusively matured in Oloroso sherry oak casks.

The experience will take customers through a layered journey of bold flavours and exceptional single malt, one that is sure to redefine how we think about pairing whisky with food.
Curated by Josh and the Saint Peter team, the menu has been carefully designed to reflect the elemental characteristics of the whisky - smoke, salinity, minerality and heat - before considering traditional pairings.
This thoughtful process breaks down the flavour profile of the whisky first, then builds a curated seafood menu that draws out those key notes and, in turn, is elevated by them. The result is a pairing that celebrates the natural flavour of sustainably-sourced Australian seafood while highlighting the complexity and depth of Tamdhu.
