This Spring, it’s time to swap your athleisure-and-avo toast ensemble for something a little more stylish, with West Hotel Sydney serving your scrambled eggs with a side of sophistication.
In a collab that’s part delicious, part designer, the sleek city retreat is pairing fashion and food to deliver a series of limited-time experiences that are impossible to resist.
From October 13, the hotel will host celebrated stylist Kerrie Carucci and launch a bottomless rosé brunch at Solander Dining and Bar.

To start, West Hotel’s signature suites are set to be transformed into a luxury styling salon. Kerrie, whose career spans dressing tennis legends, television presenters and movie stars, will host complimentary styling sessions helping guests turn seasonal trends into everyday looks. For those wanting the full treatment, she is also offering paid personal shopping sessions.
Meanwhile, Solander Dining and Bar is raising the stakes with the Bottomless Rosé Brunch. Available Monday to Saturday from 12 pm to 3 pm and 5 pm to 8 pm for $99 per person for 90 minutes, it starts with a rosé Spritz on arrival followed by free-flowing rosé sparkling house wines beers or Spritzers.
The shared menu also reads like a fashion editorial for food. Begin with salumi misti or Forged by Vows cultured quail parfait, move through earthy forest mushroom arancini, then onto charred Angus rump steak or grilled Australian barramundi fillet. Dessert is playful and nostalgic - with Iced Vovo proving that classy and cool can live on the same plate.

It's the perfect blend of style and substance. Lush Atrium greenery meets the soft pink effervescence of rosé, while Kerrie’s styling suite adds a personal touch of impeccable taste.
