Technically, it’s not drinking alone if the bartender is there!

You know the drill…it’s Friday afternoon and time to relax after a long and stressful work week.

What better way to chill out than with a cocktail at your favourite bar or restaurant. Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Aromatic and vibrant ingredients invite diners on a mouth-watering Eastern culinary adventure through a diverse menu of contemporary and classic Cantonese cuisine at Jinja on Waterloo Road in Macquarie Park. Unwind, relax and sip from an extensive drinks menu, including specialty teas, in stylish surrounds including images throughout of the restaurant’s namesake Jinja – a beautiful, independent and successful modern Chinese woman.

Created by Mirza Baig and mixologist Dan Walmsley, Jinga’s cocktail list includes drinks dedicated to the eight Immortals – a group of mythological heroes – using Japanese spirit Baijiu.

Polysemous – ‘to have many meanings’ – is a drink based on the immortal Lan Cai, who is often depicted as an eccentric and associated with longevity. Little else is known about this immortal as there is also ambiguity regarding their age and gender.

For those who have never heard of Baijiu, this drink is a great introduction. It is quite a fierce spirt, however with the combination of honey, peach, lemon and a touch of orange blossom water, it becomes tame and much more approachable for those unfamiliar with it.

This cocktail uses a clarification process involving warm milk to curdle and help strip the liquid of colour. You need to leave the mixture overnight and then pour through filter paper and a fine strainer to achieve the end result.

A spray of green tea mist before serving and a Chinese proverb attached to the drink adds the final touch.
