Named after Italian distiller Antonio Carpano, who invented Vermouth, this suave and sophisticated restaurant nestled in the Novotel South Wharf, offers city views from surrounds of marble, polished wood and feature brass pendent globes. Under the charge of Executive Chef Trent Whelan, who brings 25 years of passionate Italian cooking to the table, expect dishes such as hand cut pasta, housemade pizza and Nonna-inspired desserts. Early risers may be enticed by corn fritters with bacon, avocado, tomato salsa, sour cream and sweet chilli; while evening diners are spoilt for choice with plates of gnocchi with lobster, buttered leek, chives and crème fraiche, followed by Nonna’s tiramisu.
