Part of the $45 million redevelopment of Grand Hyatt Melbourne , the opening of Collins Kitchen in 2008 brought a new dining concept to the city. Situated within the luxurious surrounds of the hotel, the restaurant is renowned for its innovative open show kitchen and emphasis on local produce.
With an abundance of natural light and a variety of dining areas including banquette seating overlooking Russell Street, Collins Kitchen seats 180 guests with two private dining rooms seating 14 and 10 guests, as well as a relaxing lounge area.
