Vegetarian Fried Rice - Chef Recipe by Jin Ming Shu


2 eggs
1 chopped onion
1 chopped shallot
2 cloves chopped garlic
2 cups cooked rice
1 thinly chopped flat mushroom
1 thinly chopped carrots
1/2 red pepper, thinly chopped
Soy sauce to taste


Place a small amount of oil into a pan and cook eggs to form a thin omelette. Set aside.

Cook garlic and onion until fragrant. Add carrots and mushroom and cook for 2 minutes.

Add rice and soy sauce and stir fry for about a minute. Add in cooked egg and lastly add shallots.
