Smoky Bonfire Nachos



Ingredients

1 bag of corn chips
2 cups grated cheese
3 diced tomatoes
1 can of kidney beans
1/2 cup corn kernels or 1 small can
Mexican spices (paprika, salt, chilli etc)

Method

If you have a cast iron pan that won’t burn in a fire, use this for all the ingredients. If not, individual nachos bowls can be made for each happy camper from the following instructions.

Using 2-3 layers of aluminium foil, fashion a rough bowl shape the size of your hand with edges that go upwards around 5cms. Fill the first 4cms with corn chips.

Portion out and layer other ingredients on top as you please, sprinkle with Mexican spices and more cheese sprinkled on as the last layer.

Place carefully on fire and watch until cheese is melted and turning a golden brown.
Take off fire, and enjoy delicious, cheesy nachos with a smoky camp-fire flavour.
