Sam’s Christmas Ham - Chef Recipe by Sam Moore


1 Kurobota ham (Sam recommends using this type of ham), boned and rolled


250g butter
200g honey
80g brown sugar
200g Davidson plums


Pre-heat oven to 160 C. Remove skin from ham, with a small knife diamond score the ham. Stud cloves into the centre of each score intersect.

Combine all ingredients for the glaze in a saucepan and bring to the boil. Once the Davidson plums have softened, blend everything together to create a smooth glaze.

Apply the glaze to the ham with a ladle and place in oven to cook for 2 1/2 hours.

Continue to glaze ham every 30 minutes until cooked.
