Fish Fritters with Peach Salsa
Prawn and reef fish fritters with lime mayonnaise and peach salsa.
6 slices pumpernickel bread
3 Tbs sour cream
1 tsp dill, finely chopped
110g fresh smoked salmon
2 Tbs black caviar
Chives for garnish
Mix sour cream and dill together.
Use a cookie cutter and cut circles from pumpernickel. Using a smaller cutter, repeat with the salmon.
Spread a layer of sour cream on the bread, top with salmon and spoon a small amount of caviar on top.
Garnish with chives.
