50mL Popcorn Tequila
30mL popcorn agave syrup
10mL Mezcal
30mL passionfruit purée
10mL lime juice
15mL Monin vanilla syrup
30mL aquafaba
Popcorn is infused in the tequila for at least 12 hours.
Popcorn agave syrup:
Fill a pot with agave syrup and a little water and bring it to the boil. turn off the heat and let if infuse for a few hours before filtering it.
Cocktail:
Put all the ingredients in a shaker and reverse dry shake - shake with ice, strain and shake again without ice to get a frothier and smoother texture.
Serve the cocktail over fresh ice. Attach a popcorn cone to the rim with a small peg, fill with slaty popcorn to bring a salty-sweet aspect to the cocktail.
Garnish with fresh leaves and a flower.
