Love in Portofino - Recipe by Charlotte Stephenson



Ingredients

45mL Canberra Distillery Limoncello
30mL housemade citrus shrub
15mL housemade Italian herb syrup
90mL soda

Method

Citrus shrub:

This is made using equal of white wine vinegar, white sugar,and fresh citrus. When it comes to the citrus, use any that would typically become wastage making sure that there is a balance between grapefruit, lemon, lime and oranges. This sits for 72 hours in the cool room before it’s blended and strained.

Italian herb syrup:

Using a basic simple syrup recipe with 25 g each of rosemary, thyme and oregano.

Use dried herbs, but if you have any fresh items that could potentially end up as waste, incorporate them into the syrup. Let this come to a boil, turn the heat off and let it come to room temperature naturally before straining.

Cocktail:

In a shaker, wet shake the Canberra Distiller Limoncello, citrus shrub and Italian herb syrup.

Single strain into hi-ball glass. Fill the hi-ball with ice and top with soda.

To garnish, add a sprig of fresh thyme and dehydrated lemon.
