Loaded Sweet Potato Fries



Ingredients

750 g sweet potato chips
1 Tbs taco seasoning
400 g can black beans, rinsed, drained
1 1/2 cups (180 g) coarsely grated tasty cheddar
350 g mixed tomatoes, chopped
1/2 red onion, finely chopped
2 Tbs coriander leaves
1 Tbs lime juice
1 ripe avocado, stoned, peeled, sliced

Method

Preheat oven and oven tray to 210 C fan forced for 10 minutes. Line a large baking tray with baking paper. Spread sweet potato chips in a single layer on the preheated oven tray. Sprinkle with the taco seasoning. Place tray in the top half of the oven. Bake in oven for 10 minutes, turn and continue heating for a further 10-12 minutes until they’re lovely, crisp and heated through.

Sprinkle black beans and cheddar evenly over the chips on the tray. Bake for 5 minutes or until the cheddar melts.

Meanwhile, combine the tomato, onion, coriander and lime juice in a medium bowl.

Transfer the chip mixture to a serving bowl. Top with the tomato mixture and avocado. Season.
