Festive Ice Cream Pudding
Ideal for Christmas lunch or those very special occasions.
5 ripe avocadoes – skin removed
4 limes – zested
1/2 cup lime juice
1/2 cup macadamia
1 tsp vanilla extract
2 Tbs coconut cream
1-2 tsp honey
2 Tbs coconut oil
1 Tbs MCT oil
4 Tbs desiccated coconut (topping)
Combine all the ingredients on a food processor or blender and blitz for 20 seconds or until fully combined.
Remove from the jug and transfer to an airtight container and pop in the fridge for minimum 40 minutes.
Remove from the fridge and serve topped with desiccated coconut.
