500 g lamb leg steaks
1 Tbs orange juice
1 Tbs wholegrain mustard
1 garlic clove, crushed
120 g baby rocket
1/2 cup mint leaves
1 red onion, thinly sliced
2 oranges, peeled, thinly sliced
200 g fresh mozzarella, torn
1 Tbs balsamic vinegar
1 Tbs olive oil
Combine the lamb, orange juice, mustard and garlic in a shallow glass or ceramic bowl.
Heat a barbeque grill or char-grill on high. Cook the lamb on grill for 3 minutes each side or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.
Thinly slice the lamb. Combine the rocket, mint, onion, orange slices, mozzarella or bocconcini and lamb in a large bowl. Combine the vinegar and oil in a small bowl. Drizzle the dressing over the salad to serve.
