1 Tbs olive oil
1 onion, chopped
1 chilli, chopped
2 garlic cloves, chopped
1 capsicum, chopped
500 g beef mince
4 tsp paprika
4 tsp ground cumin
2 cans (total 800 g) crushed tomatoes
1 can (400 g) kidney beans
Salt and pepper
Coriander, to garnish (optional)
Set a large pot over a bush or camping stove, or over medium heat.
Heat the oil in the pot, then add the onion, chilli, garlic and capsicum and cook, stirring, for a few minutes, until browned.
Remove the veg mixture from the pot and set aside, then add the beef mince to the pot. Stir and cook that to brown it too.
Add the paprika and cumin and stir through, then add the crushed tomatoes and kidney beans along with the veg mixture from before and season with salt and pepper. Mix it all together and leave to cook for another 20 minutes before serving with a garnish of coriander if you like.
