Kangaroo Tartare with Capers, Parsley and Crispy Bread - Chef Recipe by Loic Prouin

1/4 cup flour
1/4 cup sugar
2 Tbs cocoa (natural, unsweetened)
Pinch of salt
Tiny pinch of cinnamon
1/4 cup water
2 Tbs canola oil or vegetable oil
1 to 2 drops vanilla extract
1 small scoop of ice cream or 1-2 tsp heavy whipping cream to serve
Stir flour, sugar, cocoa, salt and cinnamon in a microwave safe mug. Use a fork to break up any clumps.
Add oil, water, vanilla and stir until the mixture is smooth and there are no lumps.
Place mug in microwave and heat on high until it is cooked through. This could take between 1-2 minutes depending on the wattage of your microwave.
HINT - start with 60 second and increase until done.
When cooked, the brownie should be moist, not dry.
Let cool and serve with ice cream or whipping cream.
