Chilli and fire cooking lovers follow the aromas wafting in the Lismore breeze to Spice Pirate BBQ and Chile Banditos Condiments pop-up restaurant at various local markets. The brainchild of pirate and local identity Aaron Hargreaves, whose passion for chillies has led him down the path of low and slow cooking on a Mad Max inspired handcrafted barbeque, the venture also sells a range of sauces and condiments. Chow down on a Mexican pulled pork wrap, served in a fresh tortilla with kale slaw, lime aioli and your choice of condiments; or say ahoy to a chilli boat with smoked mild chilli halves, filled with a secret herb and cheese mix and served on a bed of kale slaw. Take home gourmet chilli flakes, smoked salts and barbeque spice rubs from Banditos’ range, along with branded kitchenware.

A Love Affair With Fire and Spice
Lismore locals have been sailing the seas of culinary supremacy since The Chile Banditos and Spice Pirate BBQ began their maiden voyage back in 2015 captained by local identity Aaron "Taco" Hargreaves.
Taco began the Chile Banditos as an outlet to express his passion for traditional fire-cooking and "all things spicy." As things progressed Aaron split his business into Chile Banditos Condiments and Spice Pirate BBQ catering.
What started as a humble Facebook group of committed chilli and BBQ lovers has now become a dedicated crew working behind the scenes to produce locally-grown and crafted products.
They have released an App on Apple and Android to keep people up to date with events, recipes, online orders, specials and much more.
As well as offering an impressive array of catering options and hosting BBQ functions, The Chile Banditos attend markets and events as well as supplying several local businesses with their range of products.
The crew serve up an assortment of fire cooked foods and an arsenal of salads and sides featuring local producers and businesses. They pride themselves on using chillies from the mildest of the mild to the wildest of the wild. To the Chile Banditos the mighty chilli is far more than heat, it's about understanding the flavours, burn level and burn duration and then being able to match that with dishes. With proper application even the dullest dish can be brought to life.
The Lismore region has provided the perfect blend of opportunity and support for this local business to thrive and they have picked up a few awards in the process. Recently they won a Readers Choice award from the Australian Good Food Guide for international Cuisine.
"One of the best things about the experience has been getting to know local people," says Taco.
Taco moved to the Northern Rivers in 2012 and is proud to call Lismore his home port.
"We try to inspire people to make better eating choices by setting a great example. In a world gone mad with distractions we like to get back to basics in our cooking techniques and offer an environment where our fellow community members can thrive."
