Chef Benson Pang is a sushi master with more than 18 years' experience, each plate is professionally prepared and crafted like a work of art as guests make their way through dinner and tasting omakase menus. Hachioji uses fresh seasonal and rare ingredients such as sea grape (seaweed), uni (sea urchin roe), truffle and shark with all dishes prepared right in front of you; think creations like hand-rolled scallop and lobster salad with avocado, or green tiger prawn, asparagus, bonito flakes, cabbage and wasabi. Delve into signature sashimi plates such as kingfish carpaccio, white onion, shiso leaves, ponzu sauce and red yuzu jam; or seared star eel, teriyaki sauce, spring onion and ginger.
