Encouraging the consumption of plant-based nutrition is the ethos behind an innovative menu, dishing up street food like charred corn, aji Amarillo mayo, Parmesan ‘cheese’, chives and chilli flakes. Perhaps carnitas tacos entice – guacamole, salsa verde, fable carnitas, chilli mayo, onion and coriander – or share crispy prawns in Panko crumbs, dressed with passionfruit and yellow chilli sauce.
