Nestled in Kyah Hotel in the heart of the snowy Blue Mountains, discover the joy of eating quality regional produce masterfully cooked by Chef Mate Herceg, in warm and welcoming rustic surrounds of a roaring fire in chilly months, a horseshoe-shaped bar and floor-to-ceiling glass letting the outside in. Start your day the right way with smashed avocado, local bread, Persian feta, chimichurri and watercress or cured Huon salmon and whipped cream cheese bagel, baby capers, pickled onion and dill. Fremantle octopus, pickled heirloom beetroot, goats’ curd and sumac is the ideal starter for an evening meal, followed by char-grilled pork saddle, fennel, sage, apple chutney, fries and salad.
