A World-Class Culinary Gem in Hervey Bay
During our recent stay in Hervey Bay, we had the unexpected pleasure of dining at Banksia Seafood and Grill — and what a discovery it was!

As seasoned food lovers who've had the good fortune to dine in numerous top-tier restaurants (including Michelin-starred venues), we were genuinely stunned by the level of culinary excellence we found here.

We started with the Baked Hervey Bay Scallops and Roasted Butternut Pumpkin Arancini — both impeccably balanced, showcasing creativity and refined technique. For the main, the Seafood Chowder in a Cob was an absolute triumph: rich, complex, and brimming with fresh local seafood, all served in a perfectly crusty cob loaf. I even took photos — the presentation was as outstanding as the flavours.

What truly elevated the experience, though, was the exceptional hospitality. Staff members Jo and Nelli were warm, knowledgeable, and wonderfully attentive without being intrusive. They made us feel welcome and genuinely cared for throughout the evening.

To find this level of finesse and heart in a modest coastal town like Hervey Bay is nothing short of extraordinary. Banksia could hold its own in any major culinary capital — and then some.

We’ll definitely return, and will be recommending this hidden gem to all our foodie friends. Bravo to the team!
