1 box vanilla cake or muffin mix
3/4 cup mini chocolate chips (watermelon 'seeds')
Red and yellow food colouring
1 cup softened butter
3 cup icing sugar
3 Tbsp milk
1 tsp vanilla
green food colouring
1/4 cup mini chocolate chips ('seeds')
Pre-heat oven and line muffin tins with paper liners.
Prepare batter according to box directions.
Add just a drop of yellow colour and enough red to achieve watermelon colour.
Fold in chocolate chips.
Fill liners 2/3 full and bake according to box directions for muffins.
Allow to cool completely.
Whip butter and vanilla until fluffy.
Gradually add icing sugar.
Add milk until it is still just thick enough to spread without oozing away.
Add green food colouring, one drop at a time until desired shade of green is achieved.
Transfer to piping bag with round tip and ice each cupcake.
Throw a pinch of mini chocolate chips on top for added fun.
Serve within 3-4 days.
