Three Cheese Dauphinoise



Ingredients

2 cups milk
1 1/4 cup thickened cream
2 cloves garlic, peeled and smashed
6 potatoes, peeled and finely sliced
50 g cheddar cheese, grated
50 g Parmesan, grated
50 g gruyere cheese, grated

Method

Preheat oven to 180 C/160 C fan-forced. In a large saucepan, boil the milk, cream, garlic and potatoes. Allow to cool slightly. Remove the garlic cloves.

Using a medium bowl, mix all the cheese together. In a slightly greased baking dish, using a slotted spoon assemble the potatoes in a single layer. Top with some of the cream and cheese mixture. Repeat until you have used up all the potato.

Cover with foil and cook in the oven for 1 hour. Remove the foil and cook for another 30 minutes or until the potatoes are cooked through.
