Strawberry Scones


2 cups flour
1/2 cup cold butter
1/3 cup sugar
1/2 tsp salt
2 tsp baking powder
1/2 cup heavy cream
1 egg
1 tsp vanilla
3/4 cup diced fresh strawbereies
Sugar, for sprinkling


Preheat oven to 200'C and prepare a baking tray.

In a bowl. combine flour, baking powder and salt together in a bowl.

Cut up butter into pieces and blend into flour until it resembles course crumbs.

Add cream and egg to mixture and mix until it comes together. Add strawberries and mix.

Pat dough into a circle and cut into desired sizes. Place on baking tray, separating scones 5cm apart.

Sprinkle sugar on top and bake for 15-18 mins until lightly browned.

Remove from pan to cool and serve warm.
