Hot Smoked Salmon Grain Salad



Ingredients

2 x 250 g packets ancient grains microwavable rice
2 bunches asparagus, woody ends trimmed
2 baby gem lettuce, leaves separated
2 x 150 g packets flaked hot smoked salmon cracked pepper
1/2 cup (80mL) Greek-style yoghurt dressing with feta & dill

Method

Heat the rice following packet directions. Transfer to a serving bowl.

Cook asparagus in a saucepan of boiling water for 1-2 minutes or until bright green. Refresh under cold water. Drain well.

Add asparagus, lettuce and salmon to the rice in the bowl and toss to combine. Drizzle with dressing to serve.
