Honey Chilli Chicken Bowls with Lime Quinoa
A no fuss start to a healthy week.
0.5 tsp chilli (de-seeded)
3 soft avocados (peeled, stone discarded)
1 lime (juice)
0.5 tsp salt
6 pickled jalapenos (de–seeded, finely chopped)
Half of an onion (finely chopped)
2 tsp fresh coriander leaves (finely chopped)
2 cherry tomatoes (chopped)
Place the avocados in a large bowl with the lime juice and mash until smooth. Add the other ingredients and mix well to combine. Place on top of your choice of corn chips.
